Mae Frederick Jubinsky, 87, Colts Neck, passed away peacefully on Friday, January 8, 2021 surrounded by her loving family.
A longtime resident of Colts Neck, NJ, she was born on October 20, 1933 in Northampton, Pa. to Norman and Mabel (Lerch) Frederick. Mae attended grade school in Northampton enrolled in a one room schoolhouse through the 8th grade. She graduated from Slatington High school, followed by a B.S. in secondary education from East Stroudsburg Teachers College (now ESU) where she met her husband Walter.
Mae and her late husband, Walter Jubinsky, resided in Marlboro, NJ and then moved to Colts Neck where they raised their family. She had a love for the outdoors, gardening and especially her horses. She rode her horses all over town, knew every trail, inviting everyone she met to come ride with her; still riding the trails well into her 85th year. She was one of the founding members of the Colts Neck Trail Riders Club, a nonprofit organization dedicated to preserving the rural character of Colts Neck and maintaining the network of trails in Colts Neck and Monmouth county for equestrian use.
Mae had a passion for living her life, especially in her golden years. She loved to entertain friends and family in her beautiful back yard, was an avid gardener, and loved country music and going dancing with her many friends and family.
Mae is predeceased by her loving husband of 56 years Walter Jubinsky. She is survived by her loving children; Michael Jubinsky and his wife Debra of Huntington Beach, Ca., Mark Jubinsky of Colts Neck, Joel Jubinsky of Florence, Mt., and Natalie Jubinsky Arrowood of Brick NJ; her loving siblings, Donald Frederick ( Marlene d.), Ray Frederick (Marge), Richard Frederick ( Barbara) and Shirley Frederick; and by her beloved grandchildren Sarah, Jessica, Greg, Alexandra and Noah.
A celebration of Mae’s life will be held Sunday, January 17th from 1:00-3:30 PM at the Holmdel Funeral Home, 26 S. Holmdel Road, Holmdel with a service to follow at 3:30 PM.

My condolences to Mae’s family, she was an amazing mother and grandmother. I was so lucky to move to Colts Neck and find that I had neighbors like Mae and Walt. I can’t imagine my life without their tutelage, Mae always making sure to call me on my bull and always striking at what I needed to here. I’ll always remember Mae up on her saddle riding off down Old Farm Road to trails unknown. She was rough, she was true and she lived her life exactly how she wanted. I’m so happy my children got to meet her, how they loved going across the street to Mae’s house, always a variety of animals, frogs and fish to feed. They especially loved her flowered paths. She will be missed always. I love you Mae.
